With its brighter, fuller flavor and more intense aroma, Parsley is an excellent source of vitamin A, C and K. Along with all dark leafy greens, this delicious herb contains iron which helps boot immune-system function. The herb complements a wide range of flavors and is traditionally added to soups, stews, salads, fish and pasta dishes just before serving. To get a more substantial helping, toss a full cup of chopped parsley into a mixed green salad, or make it the main ingredient in a glass of fresh vegetable juice.
