Sourced locally from Brennaisance Farm. A deliciously tasty portion of rump steak perfectly cut to Swiss Trim standards. Slightly marbled with the fat along one side for the best flavour! The meat is hung for a minimum of two weeks on the carcass and then dry aged on the bone for up to 12 weeks.
